In Nairobi, around 50 staff support global functions like procurement, recruitment, government relations, and communications
About the Role
The Hygiene Supervisor is responsible for assisting in the setup, oversight, and continuous improvement of all hygiene-related processes within the Dried Fruit Factory. The role ensures daily cleaning, sanitation, PPE management, and hygiene practices meet OAF, BRC, ISO 22000, HACCP, and FSMS standards. This role supports both fresh fruit receiving, dried fruit production, and packing, ensuring food safety, consistent quality, and compliance with regulatory requirements.
Responsibilities
Food Safety & Compliance
- Follow all Safety, Health, Environment, and Quality (SHEQ) requirements during production.
- Support implementation and monitoring of the Food Safety Management System (FSMS).
- Assist in HACCP, ISO 22000, and GMP compliance checks and documentation.
- Monitor and verify operations which have Critical Control Points (CCPs) are clean, and records for cleaning are kept daily..
- Oversee cleaning and sanitation procedures across all production zones (receiving, sorting, slicing, drying, packing, cold rooms, washrooms, and waste areas).
- Conduct pre-operational hygiene checks and end-of-day sanitation verification.
- Participate in internal and external food safety audits under the guidance of the Quality Supervisor.
- Ensure hygiene records, checklists, and log sheets are completed accurately and filed correctly.
Hygiene Operations Management
- Ensure effective cleaning schedules are implemented and adhered to.
- Maintain stock of cleaning chemicals and ensure correct dilution and safe use as per MSDS.
- Ensure PPE for hygiene staff and production workers is correctly distributed, maintained, and replaced.
- Monitor environmental hygiene (floors, drains, ceilings, walls, equipment).
- Ensure proper handwashing, sanitation, and entry protocols are followed by all staff.
- Oversee proper segregation, handling, and disposal of organic waste, packaging waste, and chemical waste.
- Ensure waste areas are clean, compliant, and emptied following the factory’s waste schedule.
- Work with the Production Supervisor to reduce waste generation through improved hygiene processes.
- Directly supervise 2 hygiene casuals

Qualifications
Across all roles, these are the general qualifications we look for. For this role specifically, you will have:
- Minimum Academic Qualification: Diploma in Food Science, Quality Assurance, Hospitality, or a related field.
- Work Experience: 2+ years of experience in food quality control or assurance, preferably in a dried fruit or food manufacturing environment, maintaining hygiene.
- Basic understanding of HACCP, ISO 22000, and food safety regulations.
- Attention to Detail: Ensures accuracy in quality control processes.
- Analytical Skills: Ability to identify and report issues for corrective action.
- Written and Verbal Communication: Ability to report findings clearly and concisely.
- Teamwork: Ability to work under supervision and support the quality control team.
- Time Management: Ability to complete assigned tasks within set timelines.
