You will lead, standardize, and elevate our beer program across 34 high-volume locations in Texas:

  • This role is designed for a top-tier operator who wants to own and scale a best-in-class draft beer program across one of the largest restaurant groups in Texas.
  • This is a hands-on, field-based leadership role combining draft system expertise, multi-unit operational leadership, and training and accountability.
  • You’ll report to our VP of Operations and oversee a team of Bar Managers across the company.

You will ensure every beer poured across our system meets the highest standards of quality, consistency, and profitability:

  • Draft System Excellence: Oversee all draft beer systems across 34 locations, ensuring proper line balancing, PSI, temperature and carbonation levels. Troubleshoot system issues and establish and enforce line cleaning and maintenance standards.
  • Profitability & Cost Control: Reduce draft beer waste and loss across all units. Monitor pour cost, yields, and variance. Identify opportunities to improve margin and product mix. Build systems to track and report performance by location.
  • Training & Accountability: Train and develop bar managers and staff on proper pouring techniques, draft system basics, and beer quality standards. Establish clear SOPs and ensure compliance. Hold managers accountable for execution and results.
  • Multi-unit Field Leadership: Travel weekly to Austin, Dallas, Houston, and San Antonio. Conduct regular in-store audits and performance reviews. Act as the subject matter expert and enforcer of standards, and partner with General Managers and Area Managers to drive results.
  • Program Development: Collaborate on beer selection and rotation strategy. Work with distributors and suppliers, and ensure offerings align with brand and profitability goals.

Here’s what you’ll need:

  • 5+ years in multi-unit beverage or bar operations required. Experience with high-volume restaurant groups (10+ units) preferred.
  • Deep understanding of draft beer systems and maintenance. Experience training and managing bar teams across multiple locations.
  • Must reside in Texas and be willing to travel consistently (3 days/2 nights per week). Pluckers are currently located in Central Texas (Austin, San Antonio), Dallas-Fort Worth, and Houston.
