In addition, Sensei will run the F&B operation, as part of a licensing agreement with Nobu. Position Description: 

Responsibilities include supervising the culinary functions of the Sushi Bar to meet the overall expectations of Sensei by Nobu, meeting the company's financial goals, facilities maintenance, and personnel development objectives. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, training employees; planning, assigning, and directing work; appraising performance; rewarding and counseling team members; addressing complaints and resolving problems

Responsibilities:  

  • Assist the Head Sushi Chef and Kitchen Chefs in providing consistent excellence in quality and presentation of all food to the guests.
  • Maintain the standard of excellent quality in culinary service and front of house guest services - responsible for ongoing training of the Sensei by Nobu standards and Sushi Bar standards to the Team.
  • Produce food on a timely basis and ensure servers are well educated regarding all aspects of the Sensei by Nobu menu.
  • Participate in service education through daily line-ups, quarterly menu meetings, and development of new server and cook training programs.
  • Assist the F&B department in meeting the financial targets while achieving the food quality and service objectives.
  • Maintain expert knowledge of all sushi bar stations and sushi prep responsibilities. Assist the Head Sushi Chef in training the Sushi staff to produce meals promptly in accordance with Sensei by Nobu standards.
  • Assisting in filling any open positions with candidates who are qualified and understand the Sensei by Nobu standards of excellence required of them. Training new hires and organizing cross departmental training for other team members.
  • Inventory of all the sushi bar produce - both specialty items, high volume products and Sensei by Nobu sauces.
  • Facilitating sushi and sashimi, cold dish preparation of the sushi bar requiring various cooking methods, knife skills and organizing and inventory of ingredients for the restaurant.
  • Assists the Head Sushi Chef in the organization and procurement of sushi bar operations - including items required for making sushi and sashimi, cold dishes, storing and plating.
  • Maintain a high level of cleanliness in the sushi bar.
  • Assist in supervising the daily cleaning of the Dry Storage, Sushi Bar line and dish area, walk-ins, freezer, garage storage area and trash area.
  • Represent the Head Sushi Chef in his/her absence, responsible for leading Torii Time, planning, assigning, and directing work; appraising performance; rewarding and counseling team members; addressing complaints and resolving problems.
  • Other duties as assigned by the Head Sushi Chef and Kitchen Chefs.
  • Communicate with the F&B team, identifying developable personnel and providing the necessary training as positions open.
  • attend Sensei operational sessions as requested.
  • Represent the Head Sushi Chef in his/her absence.
  • Other duties as assigned by the Head Sushi Chef and Executive Chef.
  • Always lead by example with the ability to mentor and inspire
  • Understand the Sensei mission, philosophy and brand standards and develop a team culture around the core company mission.
  • Maintain and monitor execution and follow-through of agreed upon daily, weekly, monthly, and quarterly communication meetings and resulting action items and initiatives as directed by the General Manager
  • Leadership – Maintain a positive, upbeat role, promote and exemplify Company values and represents departmental objectives and interests to internal and external customers.
  • Customer Service – Follow up on complaints, questions, and concerns; respond to internal/external customer needs in a friendly, timely and efficient manner.
  • Teamwork - Develop and promote teamwork and cooperation among co-workers.
  • Safety – Comply with established safe work practices and attend to all safety-related training provided or made available by the Company.
  • Due to the intimate nature of the resort with limited number of guests on property, must assist teams laterally across all departments to lead a seamless guest flow throughout the different resort spaces.

Requirements:

  • County of Riverside Food Handler Certification
  • ServSafe Certificate a plus

Qualifications:

  • Higher education degree in culinary arts, hospitality management, or similar preferred.
  • Minimum 2 years previous experience working in a Sushi Bar.
  • Previous experience in Sushi restaurant operations preferred.
  • Previous experience with controlling food and labor cost, demonstration cooking, and menu development preferred.
  • Ability to satisfactorily communicate in verbal and written English with guests, management, and co-workers to their understanding.
  • Prioritize and organize work assignments, have timely follow up and execution.
  • Have superb time management skills.
  • Maintain complete knowledge of all Sensei PC services/features and hours of operation.
  • Other language, mathematical, and reasoning abilities as outlined below.
  • Ability to comply with physical demands as outlined below.
  • Knowledge and understanding of Sensei PC Culture & initiatives
  • Technologically sound with Microsoft Office applications.
  • Ability to compute basic mathematical calculations.
  • Must be able to maintain a flexible work schedule.
  • Knowledge of safety initiatives in compliance with OSHA guidelines.
